Caramel Chemistry

CaramelCaramel can be created by slowly heating sugar to 340 degrees fahrenheit, removing moisture from the sugar and facilitating the isomerization and polymerization of the sugar.  Isomerization is a process whereby a molecule is transformed into another molecule with the same atoms, except arranged in a different order, while polymerization is a process whereby large, monomer molecules join together to form polymer chains, tiny three dimensional networks of monomers.  Therefore, when heat sugar to this level you are in effect transforming it into the heavier compound we know as caramel.
